Emulsion is a mixture of two or more types of liquids, where one liquid (for example, droplets) has a tiny or even ultra-microscopic size, and they are distributed with each other. These are usually formed from the components of the liquid in natural form or more commonly using mechanisms such as stirring, provided that the mixed liquids are not mutually soluble.
It is said that emulsions can be stabilized by some agents that form a film on the surface of the droplets or give them mechanical stability. The unstable form of the emulsion eventually separated into two forms of liquid layers. Stable emulsions can be destroyed by destroying or deactivating the emulsifier, for example by adding appropriate third-party substances, or even by freezing or heating processes.
Some common emulsions are milk (a dispersion of fat molecules or droplets in an aqueous solution) and butter (a dispersion of droplets of an aqueous solution in butter in fat).

In short, an emulsion is a colloid in which both the dispersed phase and the dispersion medium are liquid. When shaken together, the mixture of oil and water is the emulsion. The oil forms droplets, which are then dispersed throughout the water.
The term emulsion also applies to a group of mixed systems called solutions, gels or suspensions. For example, a photographic emulsion is gelatin composed of tiny crystals dispersed in it. Some other examples of emulsions include butter, which is a lecithin-containing emulsion with water in fat and egg yolk.
